Healthy Hearty Chicken Tofu Soup
2 pkgs Fettuccine
shaped Tofu
1 qrt low sodium chicken broth
1 c carrots, peeled and chopped
1 c celery, diced
1/2 c peas, frozen or canned
1 clove garlic, minced
1/2 c onion, chopped
1 1/2 c chicken, cooked and cut into 1/2in. cubes
salt and pepper to taste

DIRECTIONS
Prepare noodles according to package directions. Cut into
manageable size. Set aside.
In a large pot, bring chicken broth to boil. Add carrots,
celery, onion, peas and garlic. Reduce heat and simmer until vegetables are
cooked al the way through.
Add chicken and Tofu noodles and cook an additional 5 minutes;
season with salt and pepper and stir. Serve hot.
Protein is good to eat because it satisfies longer so you will not eat as much in-taking too many calories.

ReplyDeleteI really enjoyed this blog post! I will have my wife do the Chicken and tofu Noodles. I heard that eating too much red meat is bad? What is your take on it. I try to get at least one serving a week (steak).

DeleteIt can be unhealthy if eaten too often. It is all about moderation 1x per week is usually alright just need to be sure fat is cut away! I probably have steak 2x per year.
